Khao mok gai chicken Briyani rice
As an Indian, I’ve did many types of Briyani in Indian versions. Few Briyani types are more tricky to get the perfect tasty rice at all time. More over, those are various upon their cooking methods and ingredients too.
Since, I like to explore on foods, today I’ve cooked chicken Briyani rice in Thai version, which known as Khao Mok Gai. It is very popular rice dish which you can find at all the time in Bangkok,Thailand.
It is very tasty and aromatic dish ever that I’ve made before this. Those roasted and ground spices made this dish so aromatic and flavoured. The tendency of the chicken pieces were so perfectly done with special ingredients that I used in.Just few ingredients I’ve grinned instead of pounding, but it doesn’t change the taste at all.
Literally this was my first time of cooking for this dish. I am so amazed once it’s turned out well with such a spiced flavory rice and perfect cooked tenderly chicken. So yummy...As a side dish, I’ve made Raita (onion yogurt salad) which really a good combination to eat with.
Today, my kids had this dish for their dinner.They loved it....how delicious the rice were and everyone took a second helping.
So let’s start with my recipe here ...
Recipes for KHAO MOK GAI
TO MARINATIONS
INGREDIENTS
Few chicken parts (boned chest side and thighs)
garlic ginger paste - 1tsp
Yogurt - 2 tbsp
Curry powder- 1tsp
Turmeric powder - 1/2 tsp
Coriander leaves - chopped
Salt - to taste
HOW TO DO
1. Wash the chicken throughly and drained.
2. Mix all ingredients above until a smooth paste.
3. Drops in the chicken and mix well with your hand until the chicken parts nicely coated with paste.
4. Leave this mixture to marinate for 2 hours.
5. Then, fry the marinated chicken pieces into hot oil just until half cooked.
6.Save the left over oil and marinate paste for the next fry.

SPICES TO BLEND
Coriander seeds - 1 ts
Aniseed - few
Flower seeds
Cumins- 1/2 tsp
HOW TO DO
1. Roast all spices except cumins until you smell spices.
2. Next, roast cumins separately since it will get roast very quickly.
3. Then, grin it into a powder formed.

FOR RICE
INGREDIENTS
Jasmine rice - 3 cups
Chicken stock - 3 cups
Grind spices - 2 tsp
Bay leaves- 2 pcs
Cinnamon stick - 1
Onions - 2 ,diced
Garlic- 5, chopped
Tomatoes - 2,diced
Oil
Marinate paste
HOW TO DO
1. Wash the rice until clear running water and drain it.
2. Use the left over oil on hot pan.
3. Throw chopped garlic and diced onions in.
3. Sauté until lightly brown.
4. Add in tomatoes and cook until it’s half cooked.
5. Now,Add the marinate paste with rice until no liquids.
6. Add salt to taste.
7. Drop the sautéed rice into rice cooker.
8. Pour the chicken stock in and level the stock with your hand.
8. Make sure it is above your knuckles.
9. Swift it on to cook.
10. Serve it with raita for more taste..
