Khao mok gai chicken Briyani rice

As an Indian, I’ve did many types of Briyani in Indian versions. Few Briyani types are more tricky to get the perfect tasty rice at all time. More over, those are various upon their cooking methods and ingredients too. Since, I like to explore on foods, today I’ve cooked chicken Briyani rice in Thai version, which known as Khao Mok Gai. It is very popular rice dish which you can find at all the time in Bangkok,Thailand.  It is very tasty and aromatic dish ever that I’ve made before this. Those roasted and ground spices made this dish so aromatic and flavoured. The tendency of the chicken pieces were so perfectly done with special ingredients that I used in.Just few ingredients I’ve grinned instead of pounding, but it doesn’t change the taste at all.  Literally this was my first time of cooking for this dish. Canned Mathi (Sardine) Curry with white radish and boiled egg



Hi there ! Today I'm really tired over some last minute kids school preparations. I'm ran out of time to purchase any vegetable or fishes at grocery store. So, canned sardines caught my eyes from my pantry staples. 

Usually I try to avoid canned foods. But Sardine pack a nutritional punch. It also called as healthy food in a can. Sardine consist with high omega-3s and calciums. 

Mathi or sardine is a popular fish in Kerala. Most of keralites like to use fresh sardines for their daily curry or fry dishes. I preferred to use canned sardine in tomato sauce for all type of sardine dish. This time, I made Mathi curry with white radish and boiled eggs in keralite way. 

While cooking white radish in tangy tamarind and rich coconut milk,it certainly gives an awesome fragrant flavours by lingering whole over my apartment. It's really fabulous taste pairing with rice or capati. No worries since I'm ahead for kids lunch,
Let's go on with my recipe;

Ingredients
Canned sardine - 1 medium can (rooster brand)
White radish - 1 small size ..cut half and sliced 
Potatoes - 2 nos.. cuts in round shapes
Onions - 3 nos..sliced 
Garlics - 5-6 cloves
Green chilies - 2 nos..halved
Tomato - 1 ..sliced
Turmeric powder - 1 tsp
Coriander powder - 3 tbsp
Chili powder - 3 tbsp
Curry leaves - 1 stick
Water
Tamarind - 1/2 tsp ..juiced
Salt
Oil 
Thick Coconut milk - 3/4 cup
Coriander leaves - handful ..chopped

To temper
Mustard seeds - 1 tsp
Fenugreek - 1/2 tsp
Fennel - 1/2 tsp

Preparation 

1. Heat oil in a pot. Tempering mustard,fenugreek and fennel until pops.

2. Sautéing sliced onions and garlic until turn brown.
3. Keep boil some eggs in a separate pot.

4. Throw in sliced tomato,potatoes and white radish on sauted mix...and stir well for second.

5. Add in turmeric,coriander and chili powder, stir constantly. Oil being separating..



6. Now, add some water and throw in green chilies and curry leaves...bring it to boil.


7. When potatoes in half cooked, drop in the canned sardine into boiling gravy. Make sure to wash top throughly before opening the can. For safety and healthy precaution.
7. At the same time, add in cooked,peeled and cleaned boiled eggs.

8. Also,pour in tamarind juice. Stir well. Let the gravy to boil for 5-10 minutes.

9. Once potatoes and white radish are cooked well..slow down flames, slowly pour in the thick coconut milk while stiring for seconds.
10. Switch off and sprinkles chopped coriander. Serve with capati.
