Khao mok gai chicken Briyani rice

As an Indian, I’ve did many types of Briyani in Indian versions. Few Briyani types are more tricky to get the perfect tasty rice at all time. More over, those are various upon their cooking methods and ingredients too. Since, I like to explore on foods, today I’ve cooked chicken Briyani rice in Thai version, which known as Khao Mok Gai. It is very popular rice dish which you can find at all the time in Bangkok,Thailand.  It is very tasty and aromatic dish ever that I’ve made before this. Those roasted and ground spices made this dish so aromatic and flavoured. The tendency of the chicken pieces were so perfectly done with special ingredients that I used in.Just few ingredients I’ve grinned instead of pounding, but it doesn’t change the taste at all.  Literally this was my first time of cooking for this dish. It was constantly pouring rain outside. Every districts in Malaysia continuously flooded. I should thank to God that my place is still in safe. Praying to God at this time to protect and safe those flooded victims from any dangers. During this climates,sure we would seek out something spicy and hot. Yes, I had made spicy hot chicken 65 for my family lunch. My kids were craving for chicken 65 . It's simply delicious if just eat like that...👌finger licking good👌. Actually I'm not a big fan of Sothi , but my kids and hubby loved it. So often I get requests from my kids or even my hubby to make sothi tofu or vegetables. Since chicken sothi been my 'to do list' for long time, today I made this chicken Sothi for my family lunch.  Chicken sothi fully filled with coconut milk that gives an awesome flavour with chicken. It's perfectly paired with string hoppers or plain rice. Additional with sothi, I love to make any spicy dish such as anchovies sambal or spicy fried chicken 65,it's really delicious with rice.  Ingredients   Chicken - 1/4 kg,cleaned and cut to small pieces. When I saw a carton of eggs in my kitchen on this morning, constantly I decided to make a spicy egg curry for today lunch. I am always a big fan of any egg dishes, boiled, fried or curries..my kids love omellette. Well today I made Chettinad Spicy Egg curry. You knew that I've always been fascinated with Chettinad cuisines:) I make this type of curry often with rice or capati. For a change,today I made this spicy egg curry pair great with mint rice.  This spicy curry is perfect blend of roasted spicies that gives an aromatic for a day long even the next days. Ending with coconut milk is the special touch for the curry to help coating the boiled eggs. Today I have made old fashioned basic pancakes for my kids breakfast. It's was light,fluffy and tasty when paired with maple syrup. I would say, it's the best pancakes that I ever eaten. My little one start to devouring these delicious pancake without any savouries or syrup. My elder girl loves them topped with maple syrup...it seems a perfect pairing. This recipe calls just basic ingredients that always available in our pantry. Flour,milk,butter,eggs,baking powder and not to forget vanila. I used butter instead of oil to provides more flavour to my pancakes. I preferred to cook my pancakes on my egg fry nonstick pan. My tips and tricks on successful macaron & recipe

I've had many more failures on macaron,that whole batch came in a waste. Sometimes shells are cracked,have no feet or skirt, not smooth or overlooked. My experience on making successful macaron is all about a little care,attention and learning too. After some research on making successful macaron,I've learnt some of basic information on macaron methods. There are three different basic methods of making macarons... • the French method, is most commonly used for authentic French macaron. Medhu Vadai always my choice for evening family snacks. My kids more likely to enjoy eating medhu vadai than paruppu vadai.   Its fluffiness and crispiness made them love to eat with a cup of tea or coffee. Medhu Vadai would be my first choice too for any family or festival occasions. Sometimes I love to prepare my methu Vadai with coconut chutney. It's really awesome taste. I have to admit that I've just learned to fry medhu Vadai by myself. Sometimes I have been so disappointed by using beetle leave or plastics, it turned shapeless. It's not too complicated with bare hand,first the foremost,our hand must be watery while taking the batter by using four fingers and making hole by thumb. When dropping the batter towards hot oil ,it was easily dropped into oil when we push slightly with our thumb. It was already shaped in properly. Well,first I would like to give a small brief on Water spinach. It's commonly known as ' kangkung ' (Malay language) in Malaysia. This vegetable growns naturally in waterways such as in paddy fields.  It's very much popular in South East Asia cooking. More likely to say that it's famous in some of specific dishes such as ' kangkung belacan goreng' (stir-fry) and ' Nasi goreng kampung'( fried rice) Today I made this stir fried kangkung belacan for my family dinner. My kids love to eat just with plain rice. Let me explain about the ' belacan ' that I mentioned earlier. Belacan is a fermented ground shrimp that has high pungency flavour.  It's very popular flavour that must includes into all Malaysian cuisines. I really love to cook this Kerala cuisine,Inji Puli. Basically this dish needs a lot of fresh gingers that gives truly an aromatic flavours with generous amount of tamarind juice. This recipe is made with jaggery and chili as well. Those made this curry spicy tangy flavoured with balanced sweet.  Today I made this gingery tangy sweety dish with combination of capatis. It was so tasty. It would be more tasteful when eating it with dosai or idli. This kerala dish is most popular with coconut rice or bitter guards. I still remember,when I was a kid I really had a great feast with my lovely parents and siblings at my ever unforgettable childhood home. My father is great cook. He is good in all Chinese,Malay,Indian and Western cuisines. I like the crab masala that my father cooked and his crab curry. I still can remember the taste of red curry with claws popping out. I love crab legs. My kids craving crab legs too. They love getting dirty,mess and digging out every last morsel of crab meat with their bare hands. I always love to cook crab varuval. Fried Fish Chettinad Curry Recipe (செட்டிநாட்டு வருத்த மீன் கறி)

This is a spicy with awesome flavoured best curry that I have ever made. I have mentioned in my early post that I love chettinad cuisine and been a big fan on their recipes. Chettinad Fish Curry can be prepared in many ways. It looks simple but is really hard to get right perfect taste. This fish curry has tamarind tangy sweetness flavours that gives a good taste with the spicy. Ofcourse tomatoes not going to be a subtitute to it. This curry does not required a generous amount of coconut milk but I have added a very small amount of grated coconut into it. Therefore,it doesn't taste creamy or tropical since a very little presence of grated coconut. Adding coconut milk is certainly matter of personal tastebuds .  This time, I really want to get this fish curry with bright red instead of yellowish. I love to cook chettinad dishes. Every chettinad cuisine has its own flavour that hit our taste bud. Today I've tried chettinad style fish curry with Black Pomfret fish. Be frankly saying that I'am so confident on making this dish for my family dinner.tonite. OMG...the curry was so flavourful and tasty with plain white rice. Soon after I added my grinded masala on sautéed onion mix,it's gives the curry more flavourful and the cravy was so thick even I didn't add any additional coconut milk. My Diary... On Diwali 2014

Its been over a month since my last post. November ..it was a really wonderful and crazy busy month too. Yes... I've been busy with cleaning house,baking cookies and making our famous traditional Indian savouries for Deepavali. After marriage, in these 8 years, this is the first time I've baked some cookies and savouries with my kids. It's was a great experience for me. Baking with my three little girls in my kitchen, makes those moments much more fun. Remembering when my girls snuck in bites of cookie dough while I'm busy with my oven,they loved raw dough. This year of 2014 Festival of Lights, I made some delicious cookies where my husband and kids loved it. They enjoyed eating!!! Actually, I challenged myself to bake a different recipe of cookies everyday before ahead to Diwali. I made danish butter cookies,chocolate chip cookies,pineapple tarts,almond london cookies,peanut cookies,kuih bangkit,honeycomb cookies and muruku. I've brought some of my own baked cookie...

DIY simplest chalkboard label with sugar paper (Part I)

Hi there ! Deepavali is just around the corner. My cleaning process is begins . I have just started to clean my pantry on last week. My pantry cupboard only stocked with cans,flours,sugars,noodles,sweets and biscuits. First, I'd rid off some old stuffs and papers, literally clean out the whole cupboard. I have kept my long time stocks  into a small plastic baskets and containers.  When it's about pantry organization, 'DIY chalkboard labels' are my choice that always strikes my mind. The best part about chalkboard is that I can easily erase and relable it anytime. Unfortunately, I'd hardly to get chalkboard label here at my place. Although it's easy to get through online shop but it's unaffordable. One day, I'd stumbled across a black sugar paper while shopping at a supermarket.
