Khao mok gai chicken Briyani rice

As an Indian, I’ve did many types of Briyani in Indian versions. Few Briyani types are more tricky to get the perfect tasty rice at all time. More over, those are various upon their cooking methods and ingredients too. Since, I like to explore on foods, today I’ve cooked chicken Briyani rice in Thai version, which known as Khao Mok Gai. It is very popular rice dish which you can find at all the time in Bangkok,Thailand.  It is very tasty and aromatic dish ever that I’ve made before this. Those roasted and ground spices made this dish so aromatic and flavoured. The tendency of the chicken pieces were so perfectly done with special ingredients that I used in.Just few ingredients I’ve grinned instead of pounding, but it doesn’t change the taste at all.  Literally this was my first time of cooking for this dish. Fish Briyani...recipes


I simply loved to make Briyani in various styles. So far, I have made chicken, prawn, fish even with vegetables. The most I admired and loved was my fish Briyani. Yesterday, I cooked special dinner for my relation who just newly wed couples, served them with fish Briyani,fish head curry and vegetable achar. It's so tempting.!

Fish head curry really was good combination with fish Briyani. Always to say that achar is the best touching with any type of Briyani..cucumber with carrot slices and sprinkles with some roasted sesames on achar makes it so tempting to eat...

Fish Briyani recipe 
Ingredients
For rice 
Basmatic - 3 1/2 cups 
Water - big pot boiled 
Bay leaves - 3-5
Salt - 1 tsp
Ghee - 1 tbs
Garam masala - 1/2 tsp

Marinating the fish
Ingredients 
Fish - cut cubes 
White pepper - 1/2 tsp
Fenugreek powder - 1/4 tsp
Red chili powder - 2 tsp
Turmeric powder - 1/2 tsp
Salt - 1 tsp

Fish masala 
Ingredients 
Shallots - 6-7
Ghee - 2 tbs
Green chilies - 3-4 
Ginger & garlic paste - 1 tbs
Tomatoes - 3 
Yogurt - 2 tbs
Chili powder - 2 tsp
Turmeric powder - 1/4 tsp 
Mint leaves - 1/2 cup
Coriander leave - 1/2 cup
Salt 

Briyani powder

Anise - 1
Cinnamon - 1
Cloves - 3-4
Black pepper - 4
Cardamon - 3 with seeds 
Some curry leaves
Dry chilies -2-3

Preparation 
For marinating

Marinate washed and cleaned fish cubes with all ingredients for marinating. Leave for more half hours to get more flavours.

For rice 

Soak rice after wash for 30 minutes. Boiled 3/4 water of a pot with adding all rice ingredients except rice...soon after boil add drained rice until it 3/4 cooked. Then, drain the rice and keep aside.

For masala

Heat ghee in a pan, sauté shallots,gg and chilies until golden. Add tomatoes with adding Briyani powder, mashing the tomatoes while stirring..now add other ingredients and stir well until it's thicken.. 

Layer setting for dum

Layers some fish masala on cooked rice until 2 to 3 layers and lid on. Place the pot on dosai pan with small fire for 15 minutes. Then serves with curry...achar
