Khao mok gai chicken Briyani rice

As an Indian, I’ve did many types of Briyani in Indian versions. Few Briyani types are more tricky to get the perfect tasty rice at all time. More over, those are various upon their cooking methods and ingredients too. Since, I like to explore on foods, today I’ve cooked chicken Briyani rice in Thai version, which known as Khao Mok Gai. It is very popular rice dish which you can find at all the time in Bangkok,Thailand.  It is very tasty and aromatic dish ever that I’ve made before this. Those roasted and ground spices made this dish so aromatic and flavoured. The tendency of the chicken pieces were so perfectly done with special ingredients that I used in.Just few ingredients I’ve grinned instead of pounding, but it doesn’t change the taste at all.  Literally this was my first time of cooking for this dish. Vegetarian Briyani with chili soft soy tau


Yesterday was the second Friday week of Adhi month, I made a simple vegetarian meal for my family. You may ask me why I always go for simple and easy food. Actually, when we make some food with simple ingredients, it turns well and awesome result you might get.
In this Briyani recipe,I did not use any vetetable..because,my kids always choosy on that..mmmm...but they were like tau with gravy...so shall we go for those recipes ...
Vegetarian Briyani 
Ingredients 
1. Basmatic - 2 cups
2. Water - 4 cups
3. Yogurt - 1/4 cup
4. Green chilies - 3
5. Ginger and garlic( gg) paste - 2 tbs
6. Shallot - 5
7. Briyani masala ( my version) - 1 1/2 tsp
8. Coriander leaves - handful 
9. Pudina leaves - handful
10. Ghee - 2 tbs
11. Salt

Briyani masala
Ingredients 
1. Anise - 1/2
2. Cinnamon - 1 small
3. Clove - 1 or 2
4. Cardamon seeds - 3 
5. Black pepper - 3
6. Jeera - 1/2 tsp
7. Cumin - 1/2 tsp 
- grind to powder and keep aside

Rice preparation

Wash the rice and soak for 10- 20 minutes. Heat a pan with ghee and sauté sliced shallots,chilies and gg for 10 seconds. Then add 1 tsp basmatic masala, you can add more as you preferred and stir well. Next add yogurt,mix the masala with some salt. It's will be in thick masala. Now add the drained rice and stir well. Keep aside. Prepare your rice cooker. Add the masala mixed rice into rice cooker with measured water and some saffron. Set it to cook.

Chili soft tahu gravy
1. Soft tau - diced and fry with corn stach
2. Chinese cabbage - sliced
3. Vegetarian soy sauce - 2 tbs
4. Black vinegar -  1/2 tsp
5. Light soy sauce - 2 tbs
6. Thick soy sauce - 1 tbs
7. Sesame oil - few drops
8. Sugar - 2 tbs
9. Salt 
10. Dry chilies - 5
11. Onions - diced 
12. Ginger - sliced
13. Water - 1 1/2 cups
14. Corn starch - 1 1/2 tbs

Preparation

Heat oil in a pan, sauté onion,ginger and dry chilies. Add sugar and mix to caramelize. Then add all sauces with cabbage and mix well. Add water and stir well. Leave for 5 minutes to cook well. Then add tau, stir for 2-3 seconds and serves hot on a plate with vegetarian Briyani.
