Khao mok gai chicken Briyani rice

As an Indian, I’ve did many types of Briyani in Indian versions. Few Briyani types are more tricky to get the perfect tasty rice at all time. More over, those are various upon their cooking methods and ingredients too. Since, I like to explore on foods, today I’ve cooked chicken Briyani rice in Thai version, which known as Khao Mok Gai. It is very popular rice dish which you can find at all the time in Bangkok,Thailand.  It is very tasty and aromatic dish ever that I’ve made before this. Those roasted and ground spices made this dish so aromatic and flavoured. The tendency of the chicken pieces were so perfectly done with special ingredients that I used in.Just few ingredients I’ve grinned instead of pounding, but it doesn’t change the taste at all.  Literally this was my first time of cooking for this dish. Quick and easy homemade Nasi Lemak ( coconut rice with dried anchovies sambal)


Only some weekends my kids preferred to have homemade Nasi Lemak, which has mild spicy and less fat. Basically it is a famous breakfast in Malaysia. There are some stalls or restaurants do have side dish like fried chicken, prawn sambal or other fried seafoods in addition with nasi lemak. Nowadays,this famous food would possible to have either for lunch or dinner.


This weekend I made 'my version' quick and easy Nasi lemak. This recipe would be easy to make of approximately within 1 and 1/2 hours. Just need some time,to clean those dried anchovies...be patient. Please try and enjoy the food...

Ingredients

Dried anchovies sambal

1. Dried anchovies ( cleaned and grind in half crunching ,not powder) - handful 
2. Dried Chili paste - 2/3 tbs 
3. Small tomato - half (diced)
4. Pandan leaves/screwpine leaves - a stalk
5. Shallots/ midium size onions - 5/6 ( sliced)
6. Turmeric powder - a pinch

Coconut milk rice 

1. Raw rice - 2 cups
2. Basmatic rice - 1 cup
3. Water 
4. Coconut milk - 1 cup
5. Shallots - 2
6. Ginger - thumb size
7. Serai - a stalk
8. Pandan - a stalk
9. Sugar - 2 tbs
10. Salt - 1 tsp

Preparation

Anchovies sambal

Heat some oil on a pan and sauté onion with pandan leaves until fragrant. Add grinded dried anchovies and turmeric powder,stir well. Now add chili paste with tomatoes, stir until oil floated on gravy..and add salt for taste... Cook the sambal until thick in gravy and keep aside.

Coconut milk rice

Wash the rice and soak for 10 minutes. Pour in 4 cups of water with a cup of coconut milk in rice cooker. Add soaked rice with other ingredients as I mention as above. Switch on the rice cooker and cook...after cooked,stir well before serve.


For addition,served with sliced cucumber, boiled eggs and some fried nuts...enjoy the food...
