Khao mok gai chicken Briyani rice

As an Indian, I’ve did many types of Briyani in Indian versions. Few Briyani types are more tricky to get the perfect tasty rice at all time. More over, those are various upon their cooking methods and ingredients too. Since, I like to explore on foods, today I’ve cooked chicken Briyani rice in Thai version, which known as Khao Mok Gai. It is very popular rice dish which you can find at all the time in Bangkok,Thailand.  It is very tasty and aromatic dish ever that I’ve made before this. Those roasted and ground spices made this dish so aromatic and flavoured. The tendency of the chicken pieces were so perfectly done with special ingredients that I used in.Just few ingredients I’ve grinned instead of pounding, but it doesn’t change the taste at all.  Literally this was my first time of cooking for this dish. Crispy Anchovies Fried Rice


My today dinner is so simple and quick fried rice. I love simple and easy food but taste good, ofcourse. I have always use some leftover rice to make perfect fried rice. By using very hot or just cooked rice,it goes all sticky...:(. I preferred absolutely cold rice in this recipe.

Dried anchovies obviously my favourite staple . Though it's fishy smell, the presence of anchovies makes the dishes tastier and flavourful. At the end of cooking time,sprinkles with crispy anchovies and a little white pepper powder, really the dish looks incredibly tempting.

So, here my simple crispy anchovies fried rice;

Ingredients 
Dried Anchovies - handful ...cleaned
Leftover cooked rice - 3/4 pax
Garlic - 4 cloves ..chopped 
Hot chilies - 3 nos..chopped
Mustard greens - 2 whole stems..chopped
Egg - 1
Carrot - 1 tbsp.. grated..
Fish sauce - 1 tbsp
Salt 
White pepper powder - a little 

Preparation 
1. Heat oil in a pan.

2. Fry cleaned dried anchovies until golden brown. Keep aside.

3. In the same oil, sauté chopped garlics and chilies for a second.


4. Drop in chopped mustard greens and continuously with egg. Stir well.
5. Throw in cooked rice into the egg mixture and gently stir.
6. Add in salt and fish sauce,stir constantly until all ingredients incooperate.
7. Few minutes before the end of cooking, sprinkles with fried crispy anchovies and white pepper powder..keep stir for seconds.

8. Stove off...serve this tempting dish with more chopped hot chilies in soy sauce.
