Khao mok gai chicken Briyani rice

As an Indian, I’ve did many types of Briyani in Indian versions. Few Briyani types are more tricky to get the perfect tasty rice at all time. More over, those are various upon their cooking methods and ingredients too. Since, I like to explore on foods, today I’ve cooked chicken Briyani rice in Thai version, which known as Khao Mok Gai. It is very popular rice dish which you can find at all the time in Bangkok,Thailand.  It is very tasty and aromatic dish ever that I’ve made before this. Those roasted and ground spices made this dish so aromatic and flavoured. The tendency of the chicken pieces were so perfectly done with special ingredients that I used in.Just few ingredients I’ve grinned instead of pounding, but it doesn’t change the taste at all.  Literally this was my first time of cooking for this dish. Rava Idli


My kids are heading back to school in next week,but they are still very much enjoying sleeping too long. So,today they had rava Idli for brunch. They loved it,although they haven't eaten it before. It was my first attempt ever on making this delicious rava idli for my family. Today morning, my husband had his breakfast before he leaves for work. He then eagerly go for second offering since its been one of his favourite breakfast. I was so happy to see people enjoying my cook.
Rava Idli has been in my mind lately since I saw an advertisement about instant rava on tv. I'm afraid to go on instant if it turned bad. Therefore,after some deep search on rava idli recipe,at last I've stumbled across Raks kitchen. She has used her own recipe for making rava Idli. Hence,I adopted her recipe. At last I made a perfect soft and delicious rava Idli. Rava idli with spicy coconut chutney makes an heavenly combination.
So here goes rava idli recipe;

Rava Idli
Ingredients
Rava - 1 cup
Yogurt - 1/2 cup
Water 
Ginger - chopped ,1 tsp
Green chili - 1,chopped 
Cashew nuts - 5-6 nos
Coriander leaves - a pinch.chopped
Eno fruit salt - 1 tsp
Salt - 3/4 tsp 
Carrot - grated ..1 tbsp

To temper
Mustard seeds - 1/4 tsp 
Urad dhall - 1/4 tsp
Ghee - 1 tbsp

Preparation 
1. Heat ghee in a pan. Temper with mustard seeds and urad dhall.
2. Add in chopped Ginger and chili. Toss for a minute.
3. Then,drop in rava and stir constantly for 2 minutes.
4. Switch off the stove.
5. Gently tranfer the rava mix into a bowl.
6. Let to cool down.
7. Prepare Idli steamer...let to boil 
8. At the meantime,add in yogurt into rava mix.
9. Slowly stir while adding generous water. Ensure the consistency as Idli batter.
10. Once the Idli steamer is ready, at this stage, add in Eno fruit salt and stir well. It forms bubbles.
11. In immediate action, arrange tossed cashews and pour in the rava batter on the idli mould and cook for approximately 10-15 minutes.
12. Let the rava idli remain in its idli mould until cool down. It's easy to remove then.
13. Serve with spicy coconut chutney.
