Khao mok gai chicken Briyani rice

As an Indian, I’ve did many types of Briyani in Indian versions. Few Briyani types are more tricky to get the perfect tasty rice at all time. More over, those are various upon their cooking methods and ingredients too. Since, I like to explore on foods, today I’ve cooked chicken Briyani rice in Thai version, which known as Khao Mok Gai. It is very popular rice dish which you can find at all the time in Bangkok,Thailand.  It is very tasty and aromatic dish ever that I’ve made before this. Those roasted and ground spices made this dish so aromatic and flavoured. The tendency of the chicken pieces were so perfectly done with special ingredients that I used in.Just few ingredients I’ve grinned instead of pounding, but it doesn’t change the taste at all.  Literally this was my first time of cooking for this dish. Mee Siam (with thin rice vermicelli)


I'm almost complete with wrapping my kids school books. They were so excited to begin their school life soon..and having all new stuffs. Since I was too busy with those chores,I planned to cook something very simple and tasty for my family dinner. Yes...Mee Siam or Siamese Noodles is my choice.! 

So, I made stir-fry mee siam dish for today dinner at home. My husband and kids were really enjoy eating it with having a hot milk tea. Mee Siam basically an authentic dish from Peranakan or Nyonya culture. This delicious dish is simply with shrimp flavoured noodles. It has a sweet,spicy and tangy taste. 
In my recipe, I used generous of chili paste and small amount of shrimp paste. It's really gives the dish in fragrant. Trust me...!
Let's go for my mee Siam recipe;

Ingredients
Bee Hoon (thin rice vermicelli) - 1/2 pack
Chili paste - 2 tbsp
Fish cake - 2 nos..sliced
Eggs - 2
Fried bean curd - 5 nos..sliced 
Vegetable mustard - 4 stems ..chopped 
Garlic - 5 cloves...chopped
Thai hot chilies - 2 nos..chopped
Shrimp paste - 1/2 tsp
Seasoning powder - 1/2 tsp 
Salt 
Oil

Preparation  
1. Soak bee hoon in water for 1/2 hour.
2. Drain off the water and gently pour hot water into bee hoon. Keep aside for 5 minutes. It will cook fast..again drain off the water and keep aside
3. Heat oil in pan. Sauté garlic with chilies until turn golden brown.

4. Add in sliced fish cakes,fried bean curd and vegetable mustard. Stir well.
5. Break in eggs to the mixture pan. Stir constantly.
6. Add in chili and shrimp paste. Stir for a minute.
7. Drop in the drained bee hoon,salt and seasonings. Stir constantly until all incorporate for few minutes.
 8. Swith off stove once the bee hoon perfectly mixed with all ingredients...
8. It's ready to serve in a bowl...
